This is Tarla Dalal’s recipe. I had been looking out for an eggless recipe. Luckily few days back this recipe came on her site .This was my first attempt at making them.image314.jpg

If I had waited a wee bit more for the dough to rise probably they would have swelled up more. But still they did not disappoint me .Size wise they could have been a little bigger,but I grabbed what ever came in my hand( it was a glass :) )to cut rounds .

I hope this will inspire you all to make them . Please be patient with the dough , let it rise and have a cutter handy :)

INGREDIENTS:-

1 cup maida ( all purpose flour)

2 tsp (10 gms) crumbled fresh yeast

1/2 cup milk

3 Tbsp sugar

1/2 tsp salt, 1/2 tsp vanilla essence,

1 Tbsp soft butter

Chocolate glaze icing or melted cooking chocolate

METHOD:- Combine all the ingredients except butter and knead into a soft dough.Add butter and and knead again till the dough is smooth and elastic.(approx 3-5 minutes)

Cover with muslin cloth till it doubles (15-20 ) minutes.Press the dough lightly to remove air .Roll out the dough in a sheet 1/4” thick. Cut out rounds 3” in diameter and cut a small circle inside. The dough which remains after cutting the rounds, knead it lightly and roll .image286.jpg

Cover the dough rings with a muslin cloth to double in size again. Carefully lift them and fry them in hot oil on medium fire till golden in colour.image319.jpg

Dust with castor sugar or coat them with melted cooking chocolate or chocolate glaze icing .image325.jpg
