DOUGHNUTS

This is Tarla Dalal’s recipe. I had been looking out for an eggless recipe. Luckily few days back this recipe came on her site .This was my first attempt at making them.image314.jpg

If I had waited a wee bit more for the dough to rise probably they would have swelled up more. But still they did not disappoint me .Size wise they could have been a little bigger,but I grabbed what ever came in my hand( it was a glass 🙂 )to cut rounds .

I hope this will inspire you all to make them . Please be patient with the dough , let it rise and have a cutter handy 🙂

INGREDIENTS:-

1 cup maida ( all purpose flour)

2 tsp (10 gms) crumbled fresh yeast

1/2 cup milk

3 Tbsp sugar

1/2 tsp salt, 1/2 tsp vanilla essence,

1 Tbsp soft butter

Chocolate glaze icing or melted cooking chocolate

METHOD:- Combine all the ingredients except butter and knead into a soft dough.Add butter and and knead again till the dough is smooth and elastic.(approx 3-5 minutes)

Cover with muslin cloth till it doubles (15-20 ) minutes.Press the dough lightly to remove air .Roll out the dough in a sheet 1/4” thick. Cut out rounds 3” in diameter and cut a small circle inside. The dough which remains after cutting the rounds, knead it lightly and roll .image286.jpg

Cover the dough rings with a muslin cloth to double in size again. Carefully lift them and fry them in hot oil on medium fire till golden in colour.image319.jpg

Dust with castor sugar or coat them with melted cooking chocolate or chocolate glaze icing .image325.jpg

  1. Well done!!! I normally don’t eat doughnuts..but today, I bought my son a toasted coconut doughnut,he didn’t like it so I finished it!

    your recipe is very easy…must make this for a kiddie party sometime…thanks!

    I liked the recipe , easy too. I did not have cooking chocolate , next time I will try with that 🙂

    Even I like it ,my kids love it too.The ones we get in the bakery are really oily. But these were not oily too 🙂

    the perfect doughnuts, yummy, i will surely try whenever i am in mood, by the way your naan looks great step by step, i wanted the recipe without yeast so i got now, but one hitch i don’t have prestige cooker ,i have small hawkins cooker, i might try in oven on pizza stone. let us see how it comes out?

    Thanks Vanita :)If you do not have a prestige cooker use your iron tawa (NOT NONSTICK), or an alluminium thick bottomed frypan with a handle.But don’t forget to apply water on one side of the roti. So that the roti sticks to the pan or tawa and does not drop off on the gas flame when you invert it.:) It should come out well on the pizza stone too 🙂

    The procedure is very simple and ingredients are few too. Do coat them with chocolate or castor sugar after they are cold .Or you can have them hot too 🙂

  7. Hi, this is my first visit to you blog after Ashaji ( foodieshope ) gave me the link for you naan in pressure cooker post 🙂

    Turning the pressure cooker sideways, upside down, seems a bit scary but I think I am gonna try it anyway – anything for those soft and yum naans 😉

    BTW, nice doughnuts recipe too, my kids absolutely love them 🙂

    Thanks for stopping by.It does look scary using pressure cooker but it is easy. You have to be careful though 🙂 You can also use an iron tawa on which we make phulkas or an alluminium thick bottomed pan with a handle.Do not forget to apply water to the roti. This will help it sticking to the hot tawa and prevent it from falling on the gas flame (when you invert the tawa on the flame)
    The doughnuts were nice and spongy and tasty 🙂

  8. cool! I have surfed thru ur site a no. of times, but ‘ve found time to comment today.
    The Naan recipe is tempting enough to try. I am going to try making them using regular wheat atta. My husband is health conscious. The photographs are good and illustrative and makes me confident to try the ‘cooker Naan’.
    My kids have started dictating menu items from ur site, for the day .
    Drooling ! Tommorow I ll be making Naan and Kaali dal

    Hi Vibha, thanx for stopping by :)Yes you can use atta too , but I have never used it. I make ordinary dough with atta and make tandoori roti .Do let me know whether you liked them 🙂

  12. i did try the method mentioned above twice up to now. both the times the donuts become crisp from outside pretty soon so i can’t leave them to fry for long, but the inside remains uncooked? what should i do? i did not use yeast, instead used baking powder, also i refrigerated the dough before cutting the pieces and frying them. can you shed some light on this?

  14. Hi I tried your recipe but I think the milk is little more It was very stickey and I had to add more maidha (1/2 cup more). But the donuts came out good tasty just it was not that fluffy I used dry yeast may be that is the problem in that. Any suggustions Please

    Made recipe for first time last night. My dough also very sticky until i added additional flour. Also had to use dry yeast which i mixed with warm water before adding to flour as no store around had fresh. Donuts turned out good and grandsons had their first ever donuts this morning.

  17. Wow! The clicks are amazing. When I initially saw how the dough was all flat and left to rise, I was doubtful how it would turn out. But, later when I saw the final result, I was stunned. It looks amazing and easy. I am bookmarks your page. This needs to be tried. Thanks for posting them.

  18. Hi can I use dry yeast instead of fresh yeast and what should be the quantity for the above recipe.. Please mention soon as I plan to make them tomorrow.
