SHAHI PANEER

This recipe is from Nita Mehta’s book Vegetarian Wonders.

Actually I am always on the look out for party menus ,recipes which are jhatpat but yet tasty .

Shahi Paneer fitted into this category πŸ™‚

My party menu always has a paneer and a mushroom dish to compensate for the absence of Non veg dishes, because I am a pure vegetarian..

The recipe is hassle free, gravy is quick to make and also tasty. It can be made a day before, and paneer can be added before serving.Cream enhances the taste.

So heres the recipe for Shahi Paneer

INGREDIENTS – 250 gms Paneer cut into cut into pieces

For the gravy

4 Tbsp oil or ghee ————– 1 tsp salt

1 onion chopped —————- 1/2 tsp red chilli powder

1/2 ” ginger chopped ———– 1/2 tsp pepper

1 green chilli ——————- 1/2 tsp garam masala

5 big tomatoes chopped ——– 1/3 cup cream or milk

1 Tb sp tomato sauce ———- 2 moti elaichi crushed (big brown cardamom)

METHOD-Heat 2Tbsp ghee / oil. Add chopped onion , ginger, green chilli , and moti elaichi.

Add tomatoes cover and cook for 7-8 minutes, till tomatoes are pulpy.

Remove from fire and cool .

Grind to a puree by adding 1/2 cup water.

Strain the puree.Heat 2 Tbsp oil in a pan add the tomato puree.Add red chilli powder, garam masala,pepper powder and tomato sauce.

Cook till the gravy is quite thick..

Just before serving heat the gravy add the paneer pieces , also the cream/ milk. Cook for few minutes and serve. Garnish with some grated paneer.

    Trupti even I like navratna korma naan and paneer. Perfect recipe for parties :)Try addng cashewnus too. Mommyof2 has suggested it to me . The dish will taste even better .

    Out there you must get such exceptional quality paneer from the shop if you are in a rush, right? panir teblawar aslyas baki kahi khaichi jaroor nahi, kay mahantes?

    The gravy does taste nice. Now mommyof2 has given me the idea of adding cashewnuts. This will make it better .
    Here we get paneer at vegetable vendors too .True, paneer astana kashachich jaroor naste bas naan ani paneer πŸ™‚

  3. One of my friend is coming to visit in few days and paneer is her favorite. I was thinking of making the same:-) Looks really good. try to add few cashews next time and you will get very rich gravy:-)

  7. Same here same here, being a pakka vegetarians, Paneer and mushrooms are always on the party menu at our place and my non-veg friends love it too.

    Have been looking for shahi paneer recipies for quite some time – thanks for posting it, it sure looks easypeasy. I add cashewnuts paste too, even in matar-mushroom curry to make it richer – a punjabi friend gave me that tip πŸ™‚

  9. hi archana, I luv Paneer dishes and shahi paneer is sone pe suhaga. The step by step instructions gives me a confident feel of what to expect when cooking. I have never made mushroom dishes. Elaborate on them for me sometime, please. I think I ll get tinned muschrooms in my city. I like mushroom pizza, too.

    Thanks Vibha. I will certainly give a few mushroom dishes. You should get mushrooms at your place. Try the vegge section of Big Bazaar.They keep all exotic vegetables.

    I will surely out the recipe you have suggested.You too try out my recipe and I know you will like it.Do add cream and also cashewnut paste as one of my blogger friend has suggested.It will make it further rich πŸ™‚

  13. Nice recipe. I have got couple of good points from it which I would like to add to mine. I am also very much fond of Palak Paneer. Now my family have also started liking it. There is no doubt that palak paneer is a wonderful and healthy dish among all paneer dishes.
