We had a big lemon tree when we stayed in Deolali Nasik.
Nearly the whole year the tree gave so many lemons, that after distributing, there were enough left with me.
So in those two years I made all types of pickles and this lemon squash.
This squash is so easy to make , no preservatives, no citric acid, water etc is required .
You need Lemons and Sugar, few clean and dry soft drink bottles, thats it π
Before starting ensure the bottles are clean and totally dry . This is very important.
Even the Lemons need to be washed and wiped dry. The squeezer, knife , cutting board, steel bowl, should be clean and dry.
METHOD
Fill any size bottle with sugar till a certain level. It can be till its neck or slightly lower. Just mark the level of the sugar in the bottle with a sketch pen or marker.
Squeeze the juice of lemons in a steel bowl with a squeezer. Pour this juice up to the marked level.
Do not shake the bottle while pouring.
You will notice the sugar dissolves and its level comes down.
Close the lid of the bottle and shake and shake. Good exercise for your arms .
You will notice that the sugar level goes further down and settles at the bottom around 1-1/2 inch after few hours.
In course of time may be month or so the sugar will slowly dissolve. Even if it does not dissolve totally do not worry.Its presence will not make any difference to the taste.
Just before using, shake the bottle well and pour into a glass and then pour chilled water over it and stir. The quantity of the concentrate depends on your taste. Normally for one glass 2 Tbsp is ok.
No need to add extra sugar.
I kept this squash in a cool dark place. It lasts and lasts.
Some of my friends kept these bottles in the sun for a few days. I did not keep it in the sun at all.
Lasts for ages. My last of the bottles got over after 3 years. So you can imagine the number of bottles I had made ! π
One thing I would like to mention. Initially the colour is pale yellow. As time passes around a year the colour deepens to golden yellow.
If you keep it for ages like me the colour turns brownish. There is no change in taste at all.
So now I make a jaljeera from this squash. I add roasted jeera, kala namak, and black pepper and ice π )))

Such a good idea.. My mom keeps giving me all these lemons/limes from her tree. I usally just add a pinch of salt and freeze them. But this is a much better idea. Ready to use instantly. Thanks..

Yep archu,my doubts regarding that frying onions and tomato in the micro…I have not tried cooking or sauting in micro so far..I do use it for reheating or jacket potatoes.Other than that it sleeps.My microwave utensil melts easily,whichever brand I buy..pls help me out with the name of the best brand.I want to try Bunno method..:)

And I had no clue what to do with a tree loaded with lemons. your recipe is soooo simple, I think I will make it and keep it for summer time – right now its too cold to even think of drinking lemonade !

Hi: tried this again this year- was given the recipe earlier by an acquaintance. Mine does not work..it got spoilt again. I now freeze it. Would love to not waste my freezer space. What am I doing wrong??? It gets a fermented smell ..had to throw it away..

Hi ! was just surfing to find recipe/s of making RASBHARRY sherbat when instead of that i came across your blog.i liked the idea of preserving lemon juice without any preservative.I want to have a rough idea of as to how much sugar and lemons will be needed to make juice in 8 bottles of 1/2 litre.? secondly, besides lemon can any other fruits juice be stored in the very same way as that of lemon or they get discoloured after some time? thirdly,does any fungus form on the topmost layer of the juice if kept for a long time? Hope you will respond on my queries as early as possible and in time so that i can go further and make a few bottles of juices.Pl. if you don’t mind, i want to have a recipe of JALJEERA which you make. Hope to read something new from you soon.

It is difficult to give the exact quantity required. For every half litre bottle keep at least 500gm sugar ready and around 10 to 15 normal size lemon found in India. some extra lemons are always welcome. I will try and give the jaljeera recipe later
I have never tried making the squash with other fruits so cannot recommend..No fungus forms on the top layer if you follow the hygiene , keep the bottles, lemons, hands and other equipment absolutely dry.Just do not let water come in contact while preparing the squash.My squash is still with me since 8 to 9 years. Thats scary isnt it It is still fine taste wise but the colour has changed to dark caramel colour and no fungus at all . I had made in excess.Thanks for visiting.
