Shahi Rabdi -Microwave Easy Cooking

Whenever I think of Rabdi it reminds me of Rabdi who is sitting quitely in Patna probably eating rabdi 😀 )) No no I am not going to talk about her. There are other interesting things to tell.

Rabdi faluda, Hot Jalebis with Rabdi, Chilled Fruits with Rabdi, is your mouth watering? These sweets can do wonders to your waistline 😀 )) So I avoid these goodies.

When I saw this Tarla Dalal’s Shahi Rabdi recipe I could not resist the temptation of making it. It is made in a microwave.

Those who are health conscious can use skimmed milk and skimmed milk paneer.

The taste was heavenly.Wish I had some mangoes to team with rabdi. If rabdi can do wonders to your waist line then mangoes too are culprits in increasing your cholesterol. This was told to us by our doctor. Good I came to know about this after I had my full quota of mangoes this summer. Next summer ? God knows 🙂

In this recipe the condensed milk helps to thicken the rabdi and paneer gives body and flavour. It is advisable to use unsalted paneer to prevent curdling.

INGREDIENTS

1 cup milk

1 cup grated paneer ( unsalted)

1/2 cup condensed milk

1/4 tsp elaichi powder/ green cardamom powder

a few strands saffron/kesar

1 tsp ghee

a few drops of rose essence

garnish with nuts/pista

METHOD

Mix everything in a large microwave proof bowl and microwave HIGH for 6 minutes.

Serve chilled.

IMPORTANT TIP

Select a large microwave proof bowl so that the mixture will fill one fourth its height keeping enough space for the milk to rise without spilling.

UPDATE -If you have problem getting unsalted paneer,  then curdle one litre  milk with lemon juice/vinegar. Pour this  curdled milk in a fine wire mesh sieve or a cheese cloth. Let the water drip for  about 20 minutes. The paneer is so soft , that you can just blend it with the other ingredients.

    microwave method changla ahey, jara kesaria sarkha taste assel, pan khoop thick. u r right, shud go with a few kind of fruit puree 🙂 rose essence chan lagat assel! have a good wknd!

    Tu ekdum correct olakhlas.Thick kesaria sarkhe watte :)Fruit barobar tar mastach lagel. Kahi tras pun nahi cook karayla 🙂

  3. I love Rabdi,easy too with MW.It tastes great with Jalebis too.
    As for the Cholesterol, it doesn’t affect you at all if you eat a mango a day for few days when they are in season! So eat up.Anything you do in excess even with healthy food is bad for you, not if you eat in moderation!:)

    Yes Asha moderation is the key . I think I ate more than one this summer. Next summer I will have to be careful 🙂

  6. Hey, I just read your reply on the previous post – I never thought of heirs, how disgusting! I never noticed any – how do you check for them? Eggs, or pupae?

    Immerse the florets in warm salty water for 15 to 20 minutes. The heirs will settle down. Wash with fresh water and use 🙂

    Ho rabdi combo with jilbi would tase gr8. Tula jilbi nahi milai tar fruits barobar kivan falooda barobar combine kar 🙂

    It does take long Jyothsna to prepare the rabdi, but this is short cut method 🙂

  11. Archana…. tondat pani suttay ga…. wish i could have it rite now…. this is too cool… rabdi in a microwave… i am blown over… will try it after my exams r over (which will be another 2-3 months- they r never-ending):) dont get much time these days for anything else:(

  12. My husband loves sweets and I once made rabdi and it was such a long and tiring process. I love this simple microwave recipe prepared in ONE bowl !!

    This is very very easy to prepare and tastes good. You won’t come to know the difference :)You must try this. I feel it will work well when we invite people for dinners too as a pudding 🙂

    Though I’m not a fan of ‘milky’ desserts, this Devi (rabdi) is looking delicious.

  16. I was looking for heatable edibles and I came across this page about “Rabdhi.” I have recently tried a “heat and eat” Indian curry by Kohinoor and found it delicious. Surprisingly it tasted like authentic Indian food. I’m not much of a cook (that’s why I went for convenience and tried Kohinoor’s heat and eat curries), but I’ll probably take a stab at “Rabdhi” and see how it’ll go.

    I’ve been looking at your recipes for a few days now. Your blog came up when I Googled Rabdi…and boy, am I happy or am I happy!! I absolutely LOVE to COOK, FEED & EAT!! So, anyway….I just made the Shahi Rabdi recipe and let me tell you that I am “LOVIN IT”. The only changes I made are……I used a cup of Ricotta instead of Paneer & used about 3 tsps. more condensed milk. It’s chilling right now, but let me tell you that when it came out of the microwave, the aroma was so enticing that I couldn’t resist and ended up burning my tongue….ouch!!!
    So, THANK YOU THANK YOU THANK YOU…..LOVE U & LOVE TARLA DALAL!!!!:)
